Wine making in Qvevri - the basic technological process consists in pressing grape in a Satsnakheli (grape crusher) and pouring the grape must (badagi - grape sweet juice) in the qvevri. After completion of alcoholic fermentation the “chacha” (grape skins, stalks and pips) sinks to the bottom and the qvevris are closed and after malolactic fermentation the qvevris are closed hermetically. In March the first racking occurs. After that wine is aged for about a year and than it is ready for bottling.
Our wine caller is equipped with different sizes of Qvevri, totally for 55 tons. We also produce our traditional distillated beverage `Chacha`.
This history and the cellar left by our ancestors made us decide to continue the producing of wine from grapes grown in our own vineyards in Qvevri`s carved 50 years ago in our own native village.
